Loaded Potato Casserole – Keeping On Point

These mashed potatoes are loaded with crispy bacon, gooey cheese, and flavorful green onions, making it the ultimate comfort food dish.

I love making baked potatoes and loading them up with toppings. They’re the perfect side to so many dinners.

Plus, there are so many toppings to choose from. I feel like the classic go-to is a little bit of butter and sour cream.

If you don’t want to stop there you can add some cheese, bacon, and chives.

Broccoli and cheddar cheese are also delicious on baked potatoes.

If you’re looking to make a meal out of it you can top it with chili. It’s filling and tasty!

This Loaded Potato Casserole is made up of mashed potatoes, then topped with cheddar cheese, bacon, and green onions.

How I Kept it Light:

The main part of this dish is of course, the potatoes.

Mashed potatoes don’t have to be loaded with fat and calories, that’s why I left out the butter.

When I boil the potatoes I add a teaspoon or two of Better Than Bouillon roasted chicken base. It gives the potatoes some flavor.

If you don’t have Better Than Bouillon you can add some garlic powder and onion powder.

When I mash the potatoes I add fat free half and half so they’re nice and creamy.

To top the potatoes I used reduced fat cheddar cheese. That helped to save some points.

For the bacon, I used center cut bacon. Two slices is only two points.

How to Make Loaded Potato Casserole:

Start by peeling the potatoes, then cut them into 1-inch pieces, add them to a pot of water, and boil until the potatoes are tender.

Drain the potatoes, then add them to a mixing bowl. Pour in the half and half and mash the potatoes.

While the potatoes were boiling, I got the bacon ready. I added two slices of bacon to a frying pan until they were cooked, then drained them on a paper towel.

Spray an 8×8 baking dish with nonstick cooking spray. Spread the mashed potatoes in an even layer, then top with the cheese.

Bake at 350 for 20 minutes or until the cheese is melted. Top the cheese with bacon pieces and green onions.

Ingredients

  • 2
    lbs.
    russet potatoes
  • 2-4
    tablespoons
    fat-free half and half
  • 2
    slices
    center cut bacon
  • 1/4
    cup
    reduced-fat cheddar cheese
  • 1
    green onion, sliced

Instructions

  1. Preheat oven to 350 degrees F. Spray an 8×8 baking dish with nonstick cooking spray.

  2. Peel the potatoes and cut into 1-inch pieces. Add them to a pot of water and bring to a boil. Cook until the potatoes are tender, then drain. (I like to add 2 teaspoons of Better Than Bouillon to the water, or garlic powder and onion powder.)

  3. While the potatoes are boiling, cook the bacon in a frying pan. Place the cooked bacon on a paper towel and remove any extra grease. Cut the bacon into small pieces.

  4. Add the potatoes to a mixing bowl and pour in half of the half and half. Use a handheld mixer to mash the potatoes. If the potatoes are dry add the rest of the half and half and mix together.

  5. Spread the potatoes evenly in the baking dish. Top with the cheddar cheese and bake 20 minutes, or until the cheese is melted.

  6. Top the cheese with the bacon and green onions.
