Pesto Chicken Wrap – Keeping On Point

The ingredients in pesto typically include garlic, pine nuts, basil, salt, Parmesan cheese, and olive oil.

With most of the fat coming from the pine nuts and olive oil, you’re getting heart-healthy fat.

Pesto is great for adding flavor to vegetables, pasta, and potatoes.

Every bite of the wrap is filled with flavor. Plus, it only takes about 20 minutes to make, making it perfect for an easy dinner or satisfying lunch.

The Ingredients

Boneless, skinless chicken breast. It’s high in protein, low in fat and calories. I seasoned my chicken breast with garlic powder, onion powder, salt, and pepper. You can grill the chicken or cook it in a pan.

This recipe is also great for using up leftover chicken or rotisserie chicken.

Pesto. I used store bought pesto but you can also make your own.

Romaine lettuce. I used romaine lettuce because it gives the wrap a nice crunch. It’s also high in vitamin K, which is good for bone health.

Fresh mozzarella. I chose fresh mozzarella because it’s creamy and delicious. I used my food scale to measure .5 oz, which was 1 point. I cut the cheese into small pieces so there was some in every bite.

Tomato. I used cherry tomatoes that I cut in half. They help to add color and flavor.

Red onion. This helps to add another layer of flavor.

How to Make a Pesto Chicken Wrap

The first thing I did was cut the chicken into bite-size pieces, then seasoned it with garlic powder, onion powder, salt, and pepper.

I cooked the chicken in a nonstick frying pan. It only takes a couple of minutes to cook.

While the chicken cooked, I cut the red onions and tomatoes.

When the chicken was fully cooked, I mixed it with 1 tablespoon of pesto.

Lay out the tortilla. In the center, I added the lettuce, chicken, tomatoes, fresh mozzarella, and red onion.

Roll up the wrap and it’s ready!

Serving Suggestions

I like to serve my wrap with a side of carrots and celery, plus a tablespoon of light ranch.

You could also do a side of cucumbers, or whatever your favorite vegetable is.

Baked potato chips are a tasty low point option.

If I’m making this wrap for meal prep, I like to keep the ingredients separate. I use a container with separate compartments for the chicken, lettuce, tomatoes, cheese, and onions.

When I’m ready to eat, I assemble the wrap. This way the wrap isn’t soggy after sitting in the fridge for a couple hours.

  • 1/2
    cup

  • Romaine lettuce
  • Cherry tomatoes, cut in half
  • .5 oz.
    fresh mozzarella, cut into small pieces
  • Red onion, sliced

Instructions

  1. Season the chicken breast with garlic powder, onion powder, salt, and pepper.

  2. Cook the chicken in a nonstick skillet. (While the chicken cooked I got all of the vegetables ready.)

  3. Once the chicken is fully cooked, stir in 1 tablespoon of pesto.

  4. Lay out the tortilla. Add the lettuce, chicken, tomatoes, fresh mozzarella, and red onion. Roll up the wrap and enjoy!
